When someone whispers “Akaushi,” they’re referring to the “Emperor’s Breed” of Wagyu—an elite line of Japanese Red cattle prized for their buttery, melt-in-your-mouth beef. And yes—our very own bull, Mr. Miyagi, is a proud, powerful member of that royal lineage.
What Makes Akaushi Beef So Special?
-
Perfect Marbling
Akaushi cattle like Mr. Miyagi naturally produce rich intramuscular fat, creating that silky texture and deep flavor chefs rave about. -
Healthier Fat Profile
The beef is high in oleic acid—a heart-healthy monounsaturated fat also found in olive oil. -
Rich History
Mr. Miyagi comes from a long line of purebred Akaushi cattle, tracing back over 30 generations to the mountains of Japan. These genetics were so protected, only a few made it to the U.S.—making him part of a truly rare breed. -
Sourced from HeartBrand Beef
We chose Mr. Miyagi carefully from HeartBrand Beef, a trusted Texas breeder dedicated to preserving authentic Akaushi bloodlines and raising cattle with integrity and respect. HeartBrand’s commitment to quality and sustainability aligns perfectly with our own values, ensuring that Mr. Miyagi brings the best genetics possible to our ranch.

Prime Performance Traits
Akaushi are known for being fertile, long-lived, and easy-calving. Mr. Miyagi isn’t just impressive—he’s built to work smart and sire calves that thrive. When paired with our Black Angus mamas, this trait produces smaller calves, making births smoother and safer for the cows. That means less stress on the cow, stronger calves from day one, and a more sustainable, humane calving experience overall. -
Adaptable and Resilient
Whether it’s East Texas heat or unexpected cold snaps, Mr. Miyagi handles it all with calm strength—passing on his hardy traits to his offspring.
Why You’ll Taste the Difference
Imagine a steak so tender it nearly melts on your tongue. That’s what happens when Mr. Miyagi's genetics are at work. His offspring inherit the same rich marbling, leading to beef that’s both incredibly flavorful and unbelievably tender.
Ranch-Tested, Chef-Approved
We raise every animal with care, and it shows in every cut of meat that hits your plate—thanks in large part to Mr. Miyagi’s contribution at the top of our herd.
What Mr. Miyagi Brings to Our Ranch
-
Pasture to Plate Commitment
Every calf born from Mr. Miyagi is raised on a carefully controlled, pasture-rich diet. We manage nutrition from day one to finish, ensuring optimal health and quality. -
Ethical, Sustainable, Transparent
Like any wise teacher (and yes, his name fits), Mr. Miyagi is part of a system rooted in honor, health, and heritage. No hormones. No antibiotics. Just great beef, done right. If an animal requires antibiotic treatment, we definitely prioritize their health. That cow is removed from our beef program and repurposed for other roles on the farm.
🥩 How to Enjoy Beef from Mr. Miyagi’s Line
-
Steak Night: Keep it simple. Salt, sear, and let the marbling do the work. But I personally love Kinder's "The Blend".
-
Brisket or Roast: Low and slow. The intramuscular fat breaks down for unbeatable tenderness and bold, beefy flavor.
-
Brisket
Low and slow once again. The buttery marbling from Mr. Miyagi’s line melts into the meat for unbeatable tenderness and that deep, beefy flavor brisket lovers dream of. Perfect for smoking all day or roasting in the oven. -
Sliders
Mini but mighty. That same rich marbling gives sliders a juicy, melt-in-your-mouth bite. Grill them up and top with sharp cheddar, pickled onion, and a little BBQ sauce for a knockout appetizer or game-day treat. Always go with Sweet Baby Rays!
Mr. Miyagi isn’t just a bull—he’s the heart of our herd, the genetic engine behind our best cuts, and the reason you can taste the difference in every bite. His lineage brings together the best of Wagyu genetics and the art of ranching with care. From our ranch to your table, you’ll get nothing but the Emperor’s standard in every delicious, unforgettable bite.
